100% Petit Manseng
This rather confidential vintage comes from a hectare of vines with an average age of 40 years. The harvest takes place around mid-November. These naturally overripened grapes are then very concentrated and will develop a complex aromatic palette.
VINIFICATION AND AGING
We press slowly using a pneumatic press under inert gas to maximize the grape's potential. After stabilization, fermentation is slow and at low temperatures. Aging lasts approximately 6 to 8 months.
THE TASTING
With a beautiful golden color, its nose of candied exotic fruits, orange zest, lychee, dried apricots gives the inclination to its rich, ample mouth, with a hint of freshness, to finish on a long persistent finish.
FOOD AND WINE PAIRINGS
Serve chilled at 10 – 12°C, as an aperitif with foie gras, or even a chestnut dessert or, more surprisingly, with blue cheese.
